AIP Chicken & Avocado Breakfast Bowl

AIP Chicken & Avocado Breakfast Bowl

This AIP Breakfast Bowl is the kind of recipe I love recommending to my clients — quick, balanced, and deeply nourishing. It proves that the AIP diet doesn’t have to feel restrictive. With just a few simple ingredients, you can create a satisfying, anti-inflammatory breakfast that supports your body’s healing process.

Eggs, grains, and dairy are all excluded on AIP, which can make mornings tricky at first. But once you learn how to build a nutrient-dense meal using protein, vegetables, and healthy fats, breakfast becomes an opportunity to stabilise your energy, calm inflammation, and fuel your day.

Why This AIP Breakfast Bowl Works for Autoimmune Health

This recipe combines gentle, easily digestible ingredients that are rich in the nutrients most autoimmune clients need more of — zinc, potassium, magnesium, and omega-3 fats.

  • Chicken or turkey provides lean protein to support tissue repair and immune regulation.

  • Avocado delivers monounsaturated fats for hormone balance and steady energy.

  • Spinach and sweet potatoes are packed with fibre, folate, and antioxidants that help reduce oxidative stress and feed the gut microbiome.

  • Olive oil offers natural anti-inflammatory benefits thanks to its polyphenols.

Each element is chosen for a reason — to create a complete, blood sugar–balancing breakfast that keeps you feeling full and clear-headed for hours.

How to Make It Your Own

The beauty of this recipe lies in its flexibility. Once you master the base, you can mix and match ingredients depending on what you have on hand.

Try these variations:

  • Swap chicken for turkey or salmon for variety.

  • Replace spinach with kale or chard for a stronger flavour.

  • Add steamed broccoli or courgette ribbons for extra fibre.

  • Sprinkle chopped fresh herbs like parsley, coriander, or dill for freshness.

You can also prepare everything ahead of time — cook extra protein for dinner and reheat it in the morning for a 5-minute meal.

Nutritional Insight

One of the most common issues I see in clients with autoimmune diseases is blood sugar imbalance. Irregular eating patterns, skipping breakfast, or relying on high-carb foods can all increase inflammation and fatigue.

This AIP Chicken & Avocado Breakfast Bowl supports balanced blood sugar by combining:

  • Protein (for steady glucose control)

  • Healthy fats (for longer satiety)

  • Fibre-rich vegetables (for gut motility and hormone balance)

Starting the day with this combination helps lower cortisol spikes, supports adrenal health, and reduces the likelihood of mid-morning energy crashes or cravings.

Tips for Success

  • Use leftover roasted chicken for faster prep.

  • Add a squeeze of lemon for extra flavour and digestive support.

  • Keep small containers of pre-washed greens in the fridge for convenience.

  • If you’re on the go, layer all ingredients in a jar and enjoy it warm or cold.

This simple recipe shows that eating well on the AIP diet doesn’t mean spending hours in the kitchen — it’s about combining nutrient-dense foods that help your body function at its best.
