Functional Nutrition Insight

This AIP Shepherd’s Pie isn’t just comfort food, it’s a complete, balanced meal designed to stabilise blood sugar, lower inflammation, and support immune regulation. Tips for the Perfect AIP Shepherd’s Pie

Choose the Right Sweet Potatoes:
Orange or white-fleshed sweet potatoes both work well. White ones are slightly less sweet and create a lighter mash.

Mash Texture Matters:
For the creamiest topping, mash while still warm and add a drizzle of olive oil or bone broth for extra smoothness.

Don’t Skip the Veggies:
Celery, carrot, and onion form the flavour base — they support liver detox pathways and provide prebiotic fibre for gut health.

Adjust the Broth:
If you like a saucier filling, add a splash more bone broth or some of my AIP tomato-free sauce (optional, but delicious).

Add Variety:
Swap minced beef for lamb, turkey, or even venison — all fit perfectly within AIP and offer different nutrient profiles.

Make It Ahead:
This pie can be prepared a day in advance. Store in the fridge and bake just before serving. Leftovers keep well for up to 3 days and freeze for up to 3 months.

Serve It With:

  • A simple green salad with olive oil and lemon.
  • Steamed broccoli or cauliflower for extra fibre.
  • A spoonful of fermented vegetables for natural probiotics.

Ingredients

  • 5 cups about 650 g peeled and chopped sweet potato
  • 1 medium onion diced
  • 1 large carrot diced
  • 1 stick celery finely chopped
  • 450 g grass-fed minced beef or ground lamb for variation
  • ½ cup 120 ml bone broth (beef or chicken)
  • 2 tbsp extra virgin olive oil divided
  • 1 tsp sea salt divided
  • ½ tsp dried thyme
  • ½ tsp oregano
  • 2 tsp coconut aminos
  • 2 tbsp fresh parsley chopped (plus extra for garnish)
  • Optional: ½ cup AIP tomato-free sauce

Instructions

  • Boil the sweet potatoes: Place the chopped sweet potatoes in a pot, cover with water, and boil for about 10–12 minutes until fork-tender. Drain, add half the olive oil and a pinch of salt, then mash until smooth. Set aside.
  • Cook the vegetables: In a large skillet over medium heat, warm the remaining olive oil. Add onion, carrot, and celery. Sauté for 6–8 minutes, until softened and fragrant.
  • Add the beef: Add minced beef to the pan and cook for 8–10 minutes, breaking it up with a wooden spoon until browned.
  • Add flavour and moisture: Stir in the bone broth, coconut aminos, thyme, oregano, and half the parsley. Simmer for 5–8 minutes until slightly thickened.
  • If you prefer a saucier texture, stir in ½ cup of AIP tomato-free sauce at this stage.
  • Assemble: Preheat the oven to 200°C (fan 180°C). Transfer the beef mixture to a baking dish (about 22 × 22 cm). Spread the mashed sweet potato evenly on top and use a fork to create soft peaks.
  • Bake: Bake for 25–30 minutes until lightly golden on top. Sprinkle with fresh parsley before serving.

Notes

This pie can be prepared a day in advance. Store in the fridge and bake just before serving. Leftovers keep well for up to 3 days and freeze for up to 3 months.
