Buckwheat Porridge (Gluten-free, Vegan)
Buckwheat may be one of the healthiest foods you’re not eating. Along with having numerous health benefits, it is tasty, easy to prepare and inexpensive. Energizing and nutritious, buckwheat is available throughout the year and can be served as an alternative to rice or made into porridge.
I love eating buckwheat porridge with sauerkraut and pickles or with fresh chopped tomato and parsley. Basically, you can use your imagination for adding anything you like.
- 1 cup buckwheat groats
- 3 cups water
- 1/2 tablespoon salt
- Sauerkraut or cucumber pickles
- Ground hemp seeds
- In a saucepan bring water to boil. Add uncooked buckwheat groats. Cover the pot and simmer for 10 minutes (or until water is absorbed). Turn off heat, add the salt and let it sit for 10 more minutes.
- Top with any toppings you like and serve warm.
For better digestion before cooking buckwheat, soak them in the water overnight.
