AIP Carob Banana Coconut Bites (Easy No-Bake Snack)
If you’re following the Autoimmune Protocol (AIP), the holidays can feel… a bit restrictive. Everyone’s baking, snacking, and celebrating and you’re stuck reading labels and avoiding gluten, dairy, sugar, and all the fun stuff. 😬
But it doesn’t have to be that way.
Today I’m sharing one of my go-to AIP sweet treats that’s:
- completely elimination-phase compliant,
- takes under 10 minutes to make,
- and feels like a hug in a bite. 🤎
Say hello to my AIP Carob Banana Coconut Bites, soft, naturally sweet, and full of flavour, without triggering inflammation.
Why I Created This Recipe
In my 1:1 work as an autoimmune nutritionist, I often hear this:
“I’ve removed so many foods — now I have nothing left to snack on.”
Especially with conditions like psoriasis, Hashimoto’s thyroiditis, or gut-related issues like IBS and bloating, it’s important to stay nourished without feeling deprived.
These little carob bites are my answer:
✔️ Gentle on digestion
✔️ Naturally sweet (no honey, dates or syrup)
✔️ Great for lunchboxes, busy mums, or mid-afternoon energy dips
✔️ Kid-approved!
A Nutritional Therapist’s Note
Carob is a great alternative to cocoa for anyone in the AIP phase. It’s caffeine-free, rich in antioxidants and polyphenols, and pairs beautifully with coconut and banana. Together, these bites give a boost of:
- Healthy fats (from coconut)
- Potassium (from banana)
- Fibre (helps feed your gut microbes!)
And most importantly?
They satisfy the chocolate craving without throwing your immune system off balance. 🍫
What You’ll Need
This recipe uses just a handful of real food ingredients — all available in UK supermarkets or online:
- Carob powder
- Banana
- Coconut butter
- Shredded coconut
- Coconut flour
- Cinnamon
No baking. No egg substitutes. No stress. You’ll find the exact amounts and steps at the bottom of this page.
Can You Freeze These?
Yes and in fact, I recommend it! Make a double batch and freeze them in an airtight container. They hold up beautifully and are perfect to pull out when cravings hit.
