AIP Beef & Root Vegetable Stew

AIP Beef & Root Vegetable Stew

There’s something incredibly comforting about a bowl of slow-cooked stew — especially when it’s packed with ingredients that nourish your immune system and calm inflammation.
This AIP Beef & Root Vegetable Stew is one of those meals that feels both healing and grounding. It’s rich in protein, collagen, and minerals from the bone broth, paired with slow-releasing carbohydrates from root vegetables to stabilise blood sugar and energy levels throughout the day.

It’s an ideal meal for anyone following the Autoimmune Protocol (AIP), especially during cooler months or when your body needs deep, restorative nutrition.

Functional Nutrition Insight

This stew brings together a perfect balance of nutrients for autoimmune recovery and overall gut health:

  • Beef provides complete protein, zinc, and iron — crucial for immune regulation, tissue repair, and energy.

  • Bone broth supplies amino acids like glycine and glutamine that help heal the gut lining and reduce intestinal inflammation.

  • Carrots and parsnips deliver fibre and antioxidants that support healthy digestion and hormone balance.

  • Olive oil and herbs contribute anti-inflammatory polyphenols and enhance nutrient absorption.

By combining slow-cooked protein with easily digestible vegetables, this stew supports both digestive comfort and sustained energy — two key goals in any autoimmune nutrition plan.

Blood Sugar & Energy Balance

Even though it’s a traditional comfort food, this stew is also metabolically smart. The combination of protein, fat, and fibre keeps glucose levels stable, preventing post-meal energy crashes.

Maintaining blood sugar balance is essential for people with autoimmune conditions — it reduces inflammation, supports adrenal health, and keeps cortisol in check. This meal offers long-lasting energy while gently supporting your body’s repair processes.

Tips for Success

  • Batch cooking: Make a double portion — it freezes beautifully and makes weeknight dinners effortless.

  • Flavour boosters: Add chopped fresh parsley or dill just before serving for a bright, fresh flavour.

  • Thicker texture: For a heartier version, mash some of the cooked vegetables into the broth before serving.

  • Pairing idea: Serve with a side of mashed cauliflower or roasted root vegetables for extra fibre.

This recipe is perfect for both the elimination and reintroduction phases of the AIP diet — easy to digest, satisfying, and supportive of gut and immune health.
