AIP Turkey & Sweet Potato Patties with Greens

AIP Turkey & Sweet Potato Patties with Greens

These AIP Turkey & Sweet Potato Patties with Greens are one of my favourite breakfast options to support blood sugar balance, energy, and inflammation control.
They’re simple to make, high in protein, and perfectly balanced for anyone following the Autoimmune Protocol (AIP).

This recipe is ideal for busy mornings — it’s easy to batch cook, stores well, and can also be used for lunch or post-workout meals.

Why These AIP Patties Support Autoimmune Health

Many autoimmune clients I work with struggle with fatigue, mid-morning cravings, or energy crashes. One of the main reasons? Starting the day without enough protein and healthy fats.

These patties are built to fix that:

  • Turkey provides lean, high-quality protein to help repair tissues and support immune regulation.

  • Sweet potato offers slow-releasing carbohydrates and beta-carotene to stabilise blood sugar and support thyroid function.

  • Cassava flour adds structure and fibre while keeping the recipe fully grain- and gluten-free.

  • Olive oil adds anti-inflammatory fats that promote hormone balance and satiety.

Each serving contains around 24–25 g of protein, helping you maintain steady energy levels and reduce inflammation through the day.

Nutritional Insight

As a nutritionist, I often remind clients that balanced blood sugar is one of the foundations of autoimmune recovery.
When you start the day with a meal containing protein + fibre + healthy fats, you keep cortisol levels stable and prevent inflammation spikes that can worsen fatigue, joint pain, or brain fog.

These AIP Turkey & Sweet Potato Patties tick all the boxes — they’re rich in zinc, magnesium, and iron, and they provide the right macronutrient balance to support both immune and adrenal health.

Pairing them with sautéed greens or avocado adds extra antioxidants, folate, and potassium — small details that make a big difference for long-term energy balance.

Tips for Success

  • Meal prep: Double the recipe and freeze extras for quick breakfasts.

  • Cooking method: Bake at 200°C (fan 180°C) for 20–22 minutes if you prefer not to fry.

  • Serving suggestion: Add sauerkraut or lemon juice for freshness and digestive support.

  • Protein boost: For even higher protein, serve with a small portion of leftover chicken or fish.

Servings 5 patties

Ingredients

  • 250 g minced turkey preferably organic or free-range
  • ½ medium sweet potato about 100 g, peeled and finely grated
  • 1 small courgette finely grated and excess water squeezed out
  • 1 tbsp finely chopped parsley or coriander
  • ½ tsp dried thyme or oregano
  • 1 tbsp extra-virgin olive oil plus extra for cooking
  • 1 tsp sea salt
  • 1 tbsp cassava flour helps bind and adds crispness
  • 1 –2 cups sautéed spinach or kale
  • ½ avocado sliced
  • Drizzle of olive oil and lemon juice

Instructions

  • Prepare the vegetables: Grate sweet potato and courgette. Use a clean towel to squeeze out excess liquid — this prevents soggy patties.
  • Mix the patties: In a medium bowl, combine minced turkey, grated vegetables, herbs, olive oil, cassava flour, and salt. Mix gently until fully combined.
  • Shape: Form 4–5 small patties (about 2 cm thick). If the mixture feels too wet, add another teaspoon of cassava flour.
  • Cook: Heat a little olive oil in a non-stick pan over medium heat. Cook patties for 4–5 minutes per side, until golden brown and cooked through.
  • Serve: Serve warm with sautéed spinach or kale, sliced avocado, and a drizzle of olive oil and lemon juice.

Notes

Each serving provides approximately:
  • Protein: 24–25 g
  • Fat: 17 g
  • Carbohydrates: 16 g
  • Fibre: 4 g
This combination helps stabilise blood sugar, prevent mid-morning crashes, and support thyroid and adrenal function — crucial for autoimmune recovery.
Turkey adds high-quality protein and zinc, while sweet potato and cassava provide slow-releasing carbohydrates for balanced energy.
