Black Bean & Tomato Salad

This Black Bean and Tomato Salad is healthy, fresh and colourful, and includes a very tasty lime dressing. It’s super easy to make, and even perfect for picnics or packed lunches.
Black Bean & Tomato Salad
Ingredients:
- 10 cherry tomatoes, chopped
- 1 avocado – chopped
- 1 can black beans, rinsed and drained (I prefer to cook myself)
- 1 can whole kernel corn, drained (I use frozen corn)
- 1 tablespoon fresh leafy parsley, chopped
- 2 1/2 tablespoon of olive oil
- 1 tablespoon red wine vinegar
- Juice from 1 small lime
- 3/4 teaspoon Himalayan salt (more or less to taste)
- 1/2 teaspoon cayenne pepper
- 1 garlic clove, crushed
Method:
- Place lime juice, olive oil, garlic, red wine vinegar, salt and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.
- In a salad bowl, combine beans, corn, avocado, tomatoes, and parsley. Shake lime dressing again, and pour over the salad. Stir salad to coat vegetables and beans with dressing, and serve.
